Pimenta salgada are the lynch pin in Portuguese-style steak sandwiches and other dishes. For me and many others, if they are not in there, you're just having a mildly spicy steak sandwich that you can get anywhere. They have a salty and unique flavor that makes the dish what it is. Nokake (Native American Blue Corn Cakes)

I love nokake (no-kah-kay). Perhaps it is because they are so base, simple and sustaining. It could be that they kind of remind me of the elven bread called "lembas" that sustained Frodo and Sam on their way to Mordor in The Lord of the Rings, (Geek check!). I do know that they are delicious. The recipes for corn cakes predate the arrival of the Europeans on the American continent. There are many different recipes that include all manner of ingredients including dill, bacon bits, bear grease and even wood ashes (for real good chemical and nutritional reasons). They were an important food stuff for the Native Americans and influenced the cooking of the colonists and American food today. Cornbread, corn pone, corn sticks, hoe cakes, johnny cakes and a host of other corn meal breads find their origin in nokake. duck breasts with Puy lentils, chanterelle mushrooms and bacon

Serves 4 Preparation time less than 30 mins Cooking time 30 mins to 1 hour Ingredients 175g/6oz Puy lentils 2 bay leaves 2 tbsp olive oil 10 rashers smoked streaky bacon, rind removed, finely chopped 3 shallots, finely chopped 2 carrots, finely chopped 2 garlic cloves, finely chopped 2 small celery sticks, finely chopped 2 large handfuls fresh chanterelle mushrooms, wiped clean sea salt flakes and freshly ground black pepper dash red wine vinegar extra virgin olive oil small handful fresh parsley, chopped For the duck 4 wild duck breasts salt knob of butter Method 1. Place the lentils and the bay leaves into a pan and cover with cold water. Bring them to the boil, then drain. Refill the pan with cold water to just above the level of the lentils. Bring to the boil, then reduce the heat and simmer for 30 minutes, or until tender. Add more water if the level falls below the lentils. 2.
