Portuguese Recipes-Chorizo bread








As with the fishcakes, decided to bake this and take it into work. By the end of the morning I was left searching for crumbs to satisfy my craving...None left, no bread, no crumbs, nothing but the faint scent of spicy chourico...

PORTUGUESE CHOURICO BREAD

1/4 lb. Chourico
2 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. butter, softened
2 eggs, beaten

Heat oven to 350 degrees. Grease a 9×5 or 8×4 loaf pan. Remove casing from Chorico and chop coarsely. In fry pan brown Chourico; drain and set aside.

Lightly spoon flour in measuring cup, level off. In large bowl combine flour, , baking powder, baking soda and salt. Blend well. Using pastry blender or two knives, cut in butter until crumbly. Add eggs. Stir until well blended. Set aside and let it rise for at least one hour and a half.

Place the chourico in the middle and fold, making a loaf and keeping the chourico inside as a filling. . Bake in preheated 350 degree oven for 40-50 minutes on second shelf from bottom of oven. Remove from pan. Cool on wire rack.
