Popped in to the local greengrocers who had just been to the farmers market and had returned with some amazing looking veg.
Suffering from severe lack of Iron, I decided to make my all-time favourite soup.
The carrots give it an extra sweetness which makes it also one of my son's favourites, meaning I can get away with giving him more that the standard 5-a-day in one bowlful!
It's based on a standard Portuguese Cream of Vegetable Soup Recipe, that once made, you can add any veg or legumes of your choice. Today it was Spinach.
Recipe For Basic Cream of Vegetable soup:
1 Large onion
2 Leeks
2 Cloves of Garlic
6 carrots
1/2 a large swede
2 medium potatoes
1 large parsnip
2 bay leaves
1/2 teaspoon of mixed herbs
1 cup of vegetable or chicken stock
Enough water to cover vegetables
Method:
Couldn't be easier-
Roughly chop all vegetables
Add vegetables, stock, herbs and bay leaves to a large pot and cover with water. Season.
Let it come to a boil and simmer until all vegetables are really soft.
Once it's cooked. Let it cool down for a few minutes and liquidise.
It should look something like this.
You now have your basic and yet delicious Cream of Vegetables Soup.
Check for seasoning.
I then add my spinach. Bring it to boil once again and, hey presto, it's done!
I like to add some chorizo and a splash of Extra, Extra virgin Olive Oil for added flavour
