Chorizo Bread

Re-made these today and decided to revive the recipe because I think a lot of people missed it and I do believe this is a moorish bread worth trying.

I didnt make a large loaf this time. Instead I made small ciabatta shaped litlle loaves and rolls filled with juicy chorizo.

PORTUGUESE CHOURIZO BREAD

1/4 lb. Chourizo
2 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. butter, softened
2 eggs, beaten

Heat oven to 350 degrees.
Lightly spoon flour in measuring cup, level off. In large bowl combine flour, , baking powder, baking soda and salt. Blend well. Using pastry blender or two knives, cut in butter until crumbly. Add eggs. Stir until well blended. Set aside and let it rise for at least one hour and a half.

Take a grapefruit sized amount of dough, knead it further and then roll it out on to the board. Place the chorizo in the middle and fold it in, ensuring that all edges are covered. Repeat as necessary.

Place rolls on a lightly greased tray and in the oven the oven to cook for 30 to 40 minutes!

Serve warm and enjoy!Herbed Dijon Bread on Foodista
