No Frills'Tortilla de Patatas'-Spanish Potato Omelette

Its very hot in the UK at the moment! YEAYH!!!!
In the summer, I get weird cravings for fish and end up eating nothing but fish and vegetables for 3 months!
This week I decided to plan the menus with a vegetarian/pescatarian theme.



Well, I lived in Valencia for about two years and I loved it. If I had to pick a place to live that would be the one.
The people are very friendly, the weather is gorgeous and the food...well there are no words that can describe it!!

From the tapas to the ultimate Paella Valenciana. Paella is originally from that region and you wouldnt believe how many variations there are. Unfortunately I could never recreate such delicacy.

However....while living there, a very good friend of mine taught me to cook, what she called a true Spanish Tortilla.
No frills, no peppers, fish, meat or anything but eggs, onions, potatoes and parsley.
I must say I quite like it this simple.
And its so quick, delicious and filling! Hope you give it a try!

Ingredients

4 medium potatoes- thinly sliced
6 eggs
1 large onion
2 cloves of garlic-crushed
Good quality Olive oil
some parsley
Salt and pepper to taste

Directions
Parboil the potatoes for about 10 minutes. When soft, remove and drain well.
Slice the onion and fry on a medium heat until translucent.
Add garlic and fry gently.
Add the potatoes and season
Cook for a further 2-3 minutesBeat the eggs with the parsley and season the mixture.Pour the potatoes and onion mixture into the eggs and mix well.
Place the whole mixture back into the frying pan and cook for 5-7 minutes.
Use a spatula to gently lift the mixture and check if its cooked underneath. If so,place under a hot grill to cook and brown the topCover the frying pan with a plate and flip it so that the tortilla falls on the frying pan.
Slice and serve warm.
