
I was fortunate enough to have discovered a local Fishmonger's a while ago. These are a true dying breed in the UK as the Brits are not huge fish lovers and tend to purchase their fish in the larger chain supermarkets.
I find the selection of fish in these huge places is so limited and I was thrilled to find my fishmongers.
And even more thrilled to discover it was cheaper! I bought a selection of cod, salmon, prawns and squid and it all came to £6.

The result was an explosion of sweet and spicy flavours which truly complemented and enhanced the flavours of the seafood!

Ingredients
A selection of seafood of your choice
A good amount of cooked shelled prawns
1 large chopped onion
1 large chopped carrot
2 celery sticks chopped
1 green bell pepper
1 red bell pepper
1 tbsp paprika
1 tsp cayenne pepper
2 cups of white wine
3 bay leaves
1 tin of chopped tomatoes
salt and pepper to taste
basil or parsley to garnish
Directions

2-Fry the onions, carrots and celery. Add peppers.

4-Add chopped tomatoes and strained prawn stock.
5-Add spices, bay leaves, seasoning and let it simmer for about 30 minutes.
6-Add fish and cook for 7 minutes.

7-Add seafood and cook for another 5 minutes or until done.
8- Serve with some fresh bread and basil or parsley garnish.
