Chicken Soup (Canja de Galinha)

Just a simple and healthy soup. In fact, it's greatly appreciated by the portuguese people when recovering from diseases (but not only). Because it's made mostly with water, helps the organism to recover when liquids are lost (dehidration situations) or when the organism's balance is affected. This soup has it's origins in China where it is called conjee and despite having some diferences in the way of cooking and in the ingredients, it's often used with the same purposes.

  • 1 chicken
  • 2 litre of water
  • 100 gr of rice
  • pinch of salt
  • 1 onion
Place the onion, the chicken, the water and the salt on a pan and slowly bring it to boil. Let the chicken cook removing the foam if there's any. When it's done, remove the chicken from the pan and shred it. Cook the rice in the liquid for 20 minutes afterwitch you sould add small pieces of the chicken meat and serve. If you like add some peppermint... (I hate peppermint... :P)
